  2. Prepare Aromatics: Remove pork from skillet. In the same pan, add sliced onions and minced garlic. Sauté for 3-4 minutes until onions are translucent.
  3. Combine Ingredients: Return pork to skillet with onions and garlic. Pour in apple cider, add thyme, salt, and pepper. Simmer for 2-3 minutes.
  4. Slow Cook: Transfer mixture into a slow cooker or Dutch oven. Cook on low for 6-8 hours or until fork-tender.
  5. Finish and Serve: Remove pork, let it rest for 10-15 minutes, shred, and return to cooking juices. Serve warm.
