Step-by-Step Instructions

  2. In a large mixing bowl, combine rolled oats, protein powder, baking powder, ground cinnamon, and salt.
  3. In a separate bowl, whisk together unsweetened applesauce, almond milk, eggs, and honey (or maple syrup) until smooth.
  4. Gently fold the wet ingredients into the dry mixture using a spatula.
  5. Fold in any chopped pecans, walnuts, or raisins if desired.
  6. Distribute the muffin batter evenly among the prepared muffin cups, filling each about 3/4 full.
  7. Bake for 18-20 minutes until tops are golden and a toothpick comes out clean from the center.
  8. Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack.
