For the Salmon
  • 4 fillets Salmon skin-on for extra crispiness
  • 2 tablespoons Cajun seasoning store-bought or homemade
  • 1 tablespoon Olive oil for cooking

For the Avocado Lime Crema
  • 2 ripe Avocados
  • 1/2 cup Sour cream Greek yogurt can be used
  • 2 tablespoons Fresh lime juice can substitute with lemon juice
  • 1/4 cup Chopped cilantro optional
  • 2 cloves Garlic minced
  • 1/4 teaspoon Cayenne pepper optional, adjust to taste
  • as needed tablespoons Water to achieve desired consistency
For Serving
  • 2 cups Cooked rice white, brown, or cauliflower rice
  • 1 cup Black beans optional
  • 1 cup Corn kernels optional
  • 1 cup Chopped red onion optional
  • 1 cup Diced tomatoes optional
  • 4 tortillas Corn or flour for tacos
  • 2 cups Shredded lettuce for crunch

Method
 

Step‑by‑Step Instructions
  1. Pat the salmon fillets dry with paper towels and set aside.
  2. In a small bowl, combine Cajun seasoning, olive oil, lime juice, garlic powder, salt, and black pepper. Rub this mixture onto both sides of the salmon fillets.
  3. Optional: Let the salmon marinate for 15 to 30 minutes.
  4. Heat a skillet over medium-high heat and add olive oil until shimmering.
  5. Place the salmon fillets skin-side down in the skillet and cook for 4 to 5 minutes.
  6. Flip the fillets and cook for an additional 3 to 4 minutes until cooked through.
  7. Remove the salmon from the skillet and let it rest for a few minutes.
  8. In a food processor, blend avocado, sour cream, lime juice, cilantro, garlic, salt, and cayenne pepper until smooth. Add water as needed.
  9. Cook rice according to package instructions and prepare any extra ingredients.
  10. Flake the salmon into bite-sized pieces.
  11. Serve flaked salmon in bowls over rice or in tortillas with desired toppings.
  12. Garnish with avocado lime crema and fresh cilantro, and serve with lime wedges.
