Marinade Preparation
- In a blender, combine chipotle peppers in adobo sauce, fresh lime juice, orange juice, cilantro, garlic cloves, and quartered onion. Add cumin, dried oregano, smoked paprika, salt, and pepper. Blend until smooth.
- Place the chicken thighs in a large container or bag and pour the marinade over them. Seal and refrigerate for at least 15 to 30 minutes, preferably overnight.
- Preheat your grill to medium-high (350°F to 400°F) or your skillet and air fryer to 400°F.
- Grill the chicken for 15 to 30 minutes, turning occasionally until cooked through (internal temperature of 165°F).
- For pan searing, cook in a skillet for about 8 to 10 minutes, flipping halfway through.
- If air frying, cook for 14 to 15 minutes, flipping halfway for even cooking.
- Let the chicken rest for a few minutes, then slice and serve with desired sides.
