Ingredients
  

For the Marinade
  • 1 pound Boneless Skinless Chicken Thighs Breasts can be used for a lighter option.
  • 2 tablespoons Olive Oil Any neutral oil can be used.
  • 3 peppers Chipotle Peppers in Adobo Sauce Key for smokiness.
  • 1/4 cup Fresh Lime Juice Lemon juice is a fine alternative.
  • 1/4 cup Fresh Orange Juice Bottled juice works as well.
  • 1/4 cup Fresh Cilantro Parsley can be used instead.
  • 2 cloves Garlic Cloves Fresh is best, but garlic powder is a substitute.
  • 1 large Onion (quartered) Red onion can be used for a milder taste.
  • 1 teaspoon Cumin
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 cup Water Optional for pan frying.

Method
 

Marinade Preparation
  1. In a blender, combine chipotle peppers in adobo sauce, fresh lime juice, orange juice, cilantro, garlic cloves, and quartered onion. Add cumin, dried oregano, smoked paprika, salt, and pepper. Blend until smooth.
  2. Place the chicken thighs in a large container or bag and pour the marinade over them. Seal and refrigerate for at least 15 to 30 minutes, preferably overnight.
  3. Preheat your grill to medium-high (350°F to 400°F) or your skillet and air fryer to 400°F.
  4. Grill the chicken for 15 to 30 minutes, turning occasionally until cooked through (internal temperature of 165°F).
  5. For pan searing, cook in a skillet for about 8 to 10 minutes, flipping halfway through.
  6. If air frying, cook for 14 to 15 minutes, flipping halfway for even cooking.
  7. Let the chicken rest for a few minutes, then slice and serve with desired sides.
