  • 4 fillets fresh fish (cod, tilapia, or haddock) fresh is best, but frozen can work if thawed
For the Cooking
  • 4 tablespoons olive oil 2 tablespoons for drizzling and 2 tablespoons for the sauce
  • 1 teaspoon paprika use smoked paprika for more flavor
  • 1 teaspoon garlic powder fresh minced garlic works too
  • 1 teaspoon onion powder can be omitted if preferred
For the Sauce
  • 4 tablespoons butter low-fat butter substitute can be used
  • 4 cloves garlic minced
  • 2 lemons lemons juice and zest for flavor
  • 1 tablespoon fresh parsley chopped, can also use fresh dill
  • salt and pepper to taste

Step-by-Step Instructions
  1. Pat the fresh fish fillets dry with paper towels. Drizzle 2 tablespoons of olive oil over both sides and season with salt, pepper, paprika, garlic powder, and onion powder.
  2. In a large skillet, heat over medium-high heat for 2-3 minutes. Add the seasoned fish fillets, cooking each side for 3-4 minutes until golden brown and flaky.
  3. Lower the heat to medium in the same skillet and add 4 tablespoons of butter and 2 tablespoons of olive oil. Stir until melted, then add 4 minced cloves of garlic and sauté for 1-2 minutes until fragrant.
  4. Stir in the juice and zest of 2 lemons, seasoning with salt and pepper to taste. Simmer for 2-3 minutes to let flavors combine.
  5. Return the cooked fish to the skillet, spooning the lemon butter sauce over each piece. Warm through for about a minute on low heat, then serve garnished with fresh parsley.
