  • 2 tablespoons Lemon Juice
  • 1 teaspoon Vanilla Extract Optional
For the Hidden Veggies
  • 1 cup Spinach Can substitute with kale
  • 1 medium Carrot Grated finely
For Texture & Sweetness
  • 2 tablespoons Gelatin Powder Vegans can use agar-agar or pectin
  • 2 tablespoons Honey or Maple Syrup Can be omitted for less sweetness

Method
 

Step-by-Step Instructions for Healthy Hidden Veggie Fruit Snacks
  1. In a blender, combine 1 cup of strawberries, 1 cup of blueberries, 1 cup of finely chopped spinach, and 1 grated carrot. Blend until the mixture is completely smooth.
  2. Transfer the smoothie-like puree to a saucepan over low heat, adding 1 cup of unsweetened applesauce, 2 tablespoons of honey or maple syrup, 2 tablespoons of lemon juice, and 1 teaspoon of vanilla extract. Stir gently, heating for about 5 minutes.
  3. Once heated, increase the temperature to medium. Evenly sprinkle 2 tablespoons of gelatin powder over the warm mixture and let it sit for 1 minute.
  4. After waiting for a minute, stir the mixture continuously over medium heat for about 3-4 minutes until the gelatin is completely dissolved.
  5. Remove from heat and let the mixture cool for about 5 minutes before transferring it into silicone molds or a lined baking pan.
  6. Place the filled molds or pan in the refrigerator and allow the snacks to set for at least 2 hours.
  7. Once firm, carefully remove the snacks from the molds or cut into squares if using a baking pan.
  8. Store the snacks in an airtight container in the fridge for up to a week.
