Preparation Steps
- Prepare Strawberry Confit: Wash and hull 2 cups of fresh strawberries, place in a saucepan, add ½ cup of sugar and 2 tablespoons of lemon juice, simmer over medium heat for 12–15 minutes until tender.
- Thicken Strawberry Syrup: Mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry, combine it with the reserved strawberry syrup, stir over medium heat until thickened, then fold in strawberries and let cool.
- Make Vegan Mascarpone: Whip 1 cup of chilled coconut whipping cream until fluffy, blend 8 ounces of vegan cream cheese with ½ cup of sweetened condensed coconut milk and 1 teaspoon of vanilla until smooth, then fold in whipped cream.
- Assemble Tiramisu: Layer vegan ladyfingers in a dish, brush with strawberry confit, pipe vegan mascarpone over, and repeat layers until all ingredients are used, finishing with mascarpone on top.
- Chill Before Serving: Cover with plastic wrap and refrigerate for at least 2 hours for flavors to meld and layers to set.
