  • 4 fillets Tilapia
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 1 jar Roasted Red Peppers or homemade
  • 2 cloves Garlic fresh, minced
  • 2 tablespoons Olive Oil extra virgin recommended
  • 2 tablespoons Lemon Juice adjust for acidity
  • 1 cup Chicken Broth low sodium optional
  • to taste Fresh Herbs (Basil or Parsley) for garnish

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Blend the roasted red peppers, garlic, olive oil, lemon juice, salt, and pepper until smooth.
  3. Pour half of the sauce into the baking dish, place the tilapia on top, and coat with remaining sauce.
  4. Bake for 20-25 minutes until the fish flakes easily and is opaque.
  5. Garnish with fresh herbs and serve with rice or vegetables.
