- Heat a large skillet over medium-high heat, adding olive oil and butter. Toss chicken breast in Cajun seasoning and sear for 3-4 minutes until golden brown. Remove and set aside.
- In the same skillet, lower heat to medium. Sauté diced onion for 3-4 minutes until translucent. Add minced garlic and cook for another minute until fragrant.
- Add orzo pasta into the skillet, stirring to coat in the oil and aromatics. Cook for 1-2 minutes until slightly golden.
- Pour in chicken broth and sprinkle remaining Cajun seasoning. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes until orzo is al dente.
- Remove the skillet from heat and stir in heavy cream and Parmesan cheese, mixing until the sauce is creamy and smooth.
- Return chicken to skillet, mixing with orzo and sauce. Taste and adjust seasoning if necessary. Let rest for 2-3 minutes before serving, garnished with fresh parsley.
