Preparation Steps
- In a medium bowl, whisk together the sour cream, lime juice, and garlic powder until smooth. Set aside.
- Bring a large pot of salted water to a boil. Add pasta and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
- In a large mixing bowl, combine the cooled pasta and fresh corn. Add chopped turkey bacon or chicken ham if using.
- In a skillet, melt the butter over medium heat. Stir in chili powder and drizzle over the pasta mixture. Toss gently.
- In a separate bowl, combine mayonnaise with lime juice and zest. Drizzle over the salad and fold gently.
- Garnish with chopped cilantro or green onions and allow to chill for 30 minutes before serving.
