- Melt some butter and brush it generously over flour tortillas. Sprinkle a cinnamon-sugar mixture evenly on top.
- Arrange the tortilla triangles in a single layer on a parchment-lined baking sheet. Bake for about 8–10 minutes until golden and crisp.
- In a large mixing bowl, beat softened cream cheese until smooth. Gradually add powdered sugar, vanilla extract, and heavy cream, mixing until well combined.
- In another bowl, combine diced strawberries with sugar and lemon juice. Toss gently and let it sit for about 10 minutes.
- Layer the crispy tortilla chips on a serving platter. Dollop the cheesecake filling atop the chips and top with the sweetened strawberries.
- Finish with a dusting of powdered sugar and add fresh mint or chopped pistachios. Serve immediately.
