For the Vegetables

  • 2 cups Cooked Rice Try quinoa or noodles for a fun twist.

Method
 

Marination and Cooking
  1. In a large bowl, combine chicken thighs with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Cover and refrigerate for 30 minutes.
  2. In a separate bowl, whisk together the remaining soy sauce, honey, rice vinegar, sriracha, and water to create the sauce.
  3. Heat olive oil in a skillet over medium-high heat and sear the marinated chicken thighs for 6-7 minutes on each side until browned.
  4. Add another tablespoon of olive oil to the same skillet and sauté onions, red bell pepper, and yellow bell pepper for 4-5 minutes until tender-crisp.
  5. Return the seared chicken to the skillet and pour the prepared sauce over everything. Simmer for 5-7 minutes until the sauce thickens.
  6. Serve over cooked rice, garnished with green onions and sesame seeds.
