Step‑by‑Step Instructions for Spicy Sweet Chicken Diablo
  1. In a medium bowl, combine chicken thighs with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Mix well until the chicken is thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes.
  2. While the chicken is marinating, prepare the sauce by mixing together the remaining soy sauce, honey, rice vinegar, sriracha, and water in a separate bowl. Stir until well blended.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once shimmering, add the marinated chicken thighs and cook for 5–7 minutes until browned. Remove and set aside.
  4. Add another tablespoon of olive oil to the same skillet. Sauté the onion, red and yellow bell peppers, garlic, and ginger for 5–7 minutes until tender-crisp.
  5. Return the browned chicken to the skillet along with the prepared sauce. Stir well and allow to simmer for 3–5 minutes until the sauce thickens slightly.
