For the Coconut Rice
  • 1 can Coconut Milk
  • 1 cup Jasmine Rice
  • 1 cup Chicken Broth Use vegetable broth for vegetarian option.
  • 1 teaspoon Salt
For Garnishing
  • 1/4 cup Fresh Cilantro Chopped.
  • 2 pieces Lime Wedges For serving.

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with olive oil.
  2. In a medium bowl, whisk together maple syrup, soy sauce, sriracha, minced garlic, and chili flakes.
  3. Season chicken breasts with salt and pepper, then sear in a skillet with olive oil for 2-3 minutes per side.
  4. Transfer chicken to the baking dish and coat with the marinade.
  5. Bake the chicken for 20-25 minutes until it reaches an internal temperature of 165°F (74°C).
  6. In a saucepan, combine jasmine rice, coconut milk, chicken broth, and salt; bring to a boil, then simmer for 18-20 minutes.
  7. Let the chicken rest for 5 minutes after baking, then spoon sauce over it before serving.
  8. Fluff the coconut rice with a fork and serve topped with chicken, garnished with cilantro and lime.
