  • 1 unit Red bell pepper Chopped
  • 1 unit Yellow bell pepper Chopped
  • 1 can Coconut milk Full-fat recommended
  • 1 can Diced tomatoes Drained
  • 1 tablespoon Tomato paste Optional
For the Seasoning
  • 1 tablespoon Ground cumin
  • 1 tablespoon Ground coriander
  • 1 tablespoon Paprika Use smoked for an extra flavor
  • to taste unit Cayenne pepper Adjust for spice level
  • to taste unit Salt
  • to taste unit Black pepper
For the Garnish
  • 1 bunch Fresh cilantro Chopped
  • 2 unit Lime wedges For serving

Method
 

Step‑by‑Step Instructions
  1. Season the chicken with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sauté chicken for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, sauté diced onion for 3-4 minutes until translucent. Add minced garlic and cook for 1 minute. Toss in chopped peppers and stir for 5 minutes.
  3. Stir in ground cumin, ground coriander, paprika, and cayenne pepper. Cook for 1-2 minutes. Add coconut milk and drained tomatoes and simmer.
  4. Return chicken to the skillet and stir into the sauce. Simmer for 15-20 minutes to absorb flavors.
  5. Garnish with fresh cilantro and serve hot with lime wedges.
