Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine cubed sweet potatoes with olive oil, ground cinnamon, and nutmeg. Spread onto a baking sheet and roast for 50-60 minutes, turning halfway.
  3. Once roasted, mash the sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, cinnamon, nutmeg, raisins, and marshmallows.
  4. Grease a 9x13-inch baking dish and transfer the sweet potato mixture to it, spreading evenly.
  5. Combine raw pecans with maple syrup and sprinkle on top of the sweet potato filling.
  6. Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for another 15 minutes, or until the top is golden brown.
