- Preheat your oven to 400°F (200°C).
- In a large bowl, combine cubed sweet potatoes with olive oil, ground cinnamon, and nutmeg. Spread onto a baking sheet and roast for 50-60 minutes, turning halfway.
- Once roasted, mash the sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, cinnamon, nutmeg, raisins, and marshmallows.
- Grease a 9x13-inch baking dish and transfer the sweet potato mixture to it, spreading evenly.
- Combine raw pecans with maple syrup and sprinkle on top of the sweet potato filling.
- Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for another 15 minutes, or until the top is golden brown.
- Allow to cool for 5-10 minutes before serving.
