- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large bowl, whisk together sourdough discard, vegetable oil or butter, eggs, and vanilla extract until smooth.
- In another bowl, combine flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and cinnamon and whisk thoroughly.
- Gradually add dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in walnuts or pecans, and raisins or chocolate chips if desired, being careful not to overmix.
- Pour the batter into the prepared loaf pan, smoothing out the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
- Slice the bread into pieces and enjoy.
