Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish with parchment paper or grease it lightly.
  2. In a skillet, heat olive oil over medium heat and sauté chopped red onion and red bell pepper for about 5 minutes.
  3. Add minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant, then set aside to cool.
  4. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, beaten egg, and tomato paste; add cooled veggies and mix gently.
  5. Transfer the meat mixture onto parchment paper and flatten it into an 8'x15' rectangle.
  6. Layer deli ham, fresh basil leaves, and shredded mozzarella cheese over the meat mixture, leaving a 1-inch border.
  7. Carefully roll the meatloaf away from you using parchment paper, sealing the edges firmly.
  8. Place the rolled meatloaf seam side down in the baking dish and bake for about 1 hour or until the internal temperature reaches 160°F.
