Step-by-Step Instructions
  1. In a large mixing bowl, combine fish sauce, soy sauce, brown sugar, minced garlic, grated ginger, vegetable oil, honey, black pepper, and chili powder. Whisk the ingredients together until fully dissolved.
  2. Add the chicken thighs to the bowl, coating them thoroughly in the marinade. Cover with plastic wrap and refrigerate for at least 1 hour, or overnight for deeper flavor.
  3. Preheat your grill to medium-high heat, about 400°F (200°C). Allow it to heat for 10–15 minutes.
  4. Remove the chicken from the marinade, allowing excess liquid to drip off. Grill on the preheated grates for 5–7 minutes on each side, until golden-brown and cooked to 165°F (75°C).
  5. Let the chicken rest on a plate for 5 minutes before serving.
  6. Garnish your grilled chicken with chopped cilantro and lime wedges. Squeeze lime over before serving.
