Step-by-Step Instructions
  1. Preheat your oven’s broiler to high. Remove the skin from your salmon fillet and cut it into 1-inch cubes. In a mixing bowl, combine the salmon with teriyaki sauce and a pinch of kosher salt. Allow it to marinate for about 10 minutes.
  2. Press cooked sushi rice into the bottom of a small baking dish to form a flat and sticky base. Spread the salmon mixture over the rice evenly.
  3. Sprinkle garlic powder and brown sugar over the top of the salmon layer.
  4. Place the baking dish under the broiler and let it cook for about 6 minutes until caramelized.
  5. After broiling, layer on slices of avocado, drizzle with spicy mayo, and sprinkle with furikake, crispy fried onion bits, and diced scallions.
