Step‑by‑Step Instructions
  1. Begin by thoroughly rinsing the chicken thighs under cold water. Pat them dry with paper towels, then rub each piece generously with salt, pepper, and lime juice.
  2. In a large bowl, combine full-fat yogurt with the spices: cumin, coriander, cayenne, paprika, garam masala, and turmeric. Add minced garlic and ginger, mixing until smooth.
  3. Add the chicken thighs to the marinade ensuring each piece is coated. Cover with plastic wrap and refrigerate for at least 6 hours.
  4. Preheat your oven to 450°F (232°C) or set your broiler to high, preparing a foil-lined baking sheet for even cooking.
  5. Carefully remove the marinated chicken and arrange the pieces on the prepared baking sheet.
