Method
 

Preparation Steps
  1. Marinate the chicken in a mixing bowl with olive oil, garlic, lemon juice, cumin, smoked paprika, kosher salt, curry powder, and black pepper for at least 30 minutes.
  2. Slice the bell peppers and toss them with olive oil and a pinch of salt.
  3. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
  4. Spread the marinated chicken strips and bell peppers on the sheet pan in a single layer.
  5. Bake for 15-20 minutes until chicken is cooked through at 165°F (74°C) and peppers are tender.
  6. Warm the pita bread and fill each with the roasted chicken, peppers, and tzatziki sauce, garnishing with fresh vegetables.
