Method
 

Steps
  1. Rinse the Rice: Rinse basmati rice under cold water in a fine-mesh strainer until water runs clear.
  2. Cook the Rice: Combine rinsed rice with water or vegetable broth and a pinch of salt in a medium saucepan. Bring to boil, then reduce heat and simmer for 15-20 minutes until liquid is absorbed.
  3. Let it Rest: Remove from heat and keep covered for 5 minutes to allow rice to steam.
  4. Fluff the Rice: Gently fluff the cooked rice with a fork to separate grains.
  5. Prepare the Mango and Lime: Peel and dice the mango, zest and juice the lime, then set aside.
  6. Combine Ingredients: In a large bowl, combine fluffy rice, diced mango, lime zest and juice, oil, salt, and pepper.
  7. Gently Mix: Stir everything together gently using a spatula.
  8. Serve and Garnish: Transfer to a serving dish and garnish with lime wedges and chopped cilantro if desired.
