Step‑by‑Step Instructions
  1. In a mixing bowl, combine gochujang, honey, soy sauce, sesame oil, minced garlic, and grated ginger to create a flavorful marinade. Add the chicken thighs, ensuring they are fully coated. Cover the bowl and let it marinate in the refrigerator for at least 10 minutes; for deeper flavor, aim for 2 hours.
  2. Heat a tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add sliced onion and bell pepper, cooking for about 3-4 minutes until they soften and turn slightly translucent.
  3. In the same skillet, add the marinated chicken thighs, discarding excess marinade. Cook for 5-7 minutes, turning occasionally, until the chicken is well browned and cooked through.
  4. Once the chicken is cooked, add the sautéed onion and bell pepper back into the skillet. Stir to combine all ingredients well and cook everything together for another 2-3 minutes.
