Method
 

Preparation
  1. Remove the beef tenderloin filets from the refrigerator 30 minutes before grilling.
  2. Preheat your grill to medium-high heat, reaching between 350-375°F.
  3. Slice the baguette at a 45-degree angle into ½ inch thick pieces.
  4. Brush both sides of the baguette slices with olive oil.
Grilling
  1. Toast the baguette on the grill for 1-2 minutes on each side.
  2. Turn your grill to high heat, aiming for 450-475°F.
  3. Season the beef tenderloin filets with kosher salt and fresh ground pepper on both sides.
  4. Grill the filets for about 3-5 minutes per side, aiming for an internal temperature of 125°F.
  5. Remove the tenderloin filets from the heat and let them rest for 10 minutes.
Assembly
  1. Prepare the Béarnaise sauce according to the package instructions.
  2. Assemble the crostini by layering 1-2 slices of the grilled beef on top of each toasted baguette.
  3. Drizzle Béarnaise sauce over the beef and sprinkle with fresh chives or parsley.
