- In a medium bowl, crumble 1 cup of feta cheese and grate ½ cup of kefalograviera. Add a few twists of freshly cracked black pepper and mix until well combined.
- Unroll the phyllo dough on a clean work surface and cover with a slightly damp cloth. Brush one phyllo sheet generously with olive oil.
- Layer a portion of the cheese filling along one edge of the phyllo sheet and repeat the process with two more sheets.
- Roll the phyllo sheets from the edge with the cheese filling into a tight cylinder and tuck in the ends to seal.
- Wrap the rolled phyllo tightly in plastic wrap and freeze for at least one hour.
- Preheat your oven to 350°F (175°C). Slice the frozen rolls into 1-inch pieces and place on a greased baking pan.
- Bake for 20-30 minutes, or until golden brown and crispy.
