  • 1 cup feta cheese crumbled
  • 0.5 cup kefalograviera cheese grated, or substitute with pecorino
  • to taste black pepper freshly cracked
For the Phyllo Preparation
  • 12 sheets phyllo sheets
  • as needed tablespoons olive oil for brushing

Method
 

Step-by-Step Instructions
  1. In a medium bowl, crumble 1 cup of feta cheese and grate ½ cup of kefalograviera. Add a few twists of freshly cracked black pepper and mix until well combined.
  2. Unroll the phyllo dough on a clean work surface and cover with a slightly damp cloth. Brush one phyllo sheet generously with olive oil.
  3. Layer a portion of the cheese filling along one edge of the phyllo sheet and repeat the process with two more sheets.
  4. Roll the phyllo sheets from the edge with the cheese filling into a tight cylinder and tuck in the ends to seal.
  5. Wrap the rolled phyllo tightly in plastic wrap and freeze for at least one hour.
  6. Preheat your oven to 350°F (175°C). Slice the frozen rolls into 1-inch pieces and place on a greased baking pan.
  7. Bake for 20-30 minutes, or until golden brown and crispy.
