Cooking Steps
- Prepare the ingredients by dicing onion and bell pepper, slicing the beef sausage, and rinsing the black beans.
- In a large pot, heat a splash of olive oil over medium heat. Add the sliced beef sausage and sauté for about 5–7 minutes.
- Add the diced onion, minced garlic, and bell pepper to the pot. Cook for another 3–4 minutes.
- Stir in the rinsed black beans and rice, followed by the spices and 2 cups of water or broth. Bring to a boil.
- Reduce heat to low, cover tightly, and let simmer for 20–30 minutes.
- Remove from heat, let sit for a few minutes, fluff with a fork, and stir in lime juice or vinegar if desired.
