  • 1 cup Rice White or brown rice works.
For the Sausage
  • 1 link Beef Sausage Feel free to swap with chicken sausage or a vegetarian option.
For the Aromatics
  • 1 medium Onion Yellow or white onion preferred.
  • 2 cloves Garlic Fresh garlic adds a nice kick.
  • 1 medium Bell Pepper Any color works.
For the Seasoning
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 2 cups Water or Broth
  • 1 tablespoon Lime Juice or Vinegar Optional.

Cooking Steps
  1. Prepare the ingredients by dicing onion and bell pepper, slicing the beef sausage, and rinsing the black beans.
  2. In a large pot, heat a splash of olive oil over medium heat. Add the sliced beef sausage and sauté for about 5–7 minutes.
  3. Add the diced onion, minced garlic, and bell pepper to the pot. Cook for another 3–4 minutes.
  4. Stir in the rinsed black beans and rice, followed by the spices and 2 cups of water or broth. Bring to a boil.
  5. Reduce heat to low, cover tightly, and let simmer for 20–30 minutes.
  6. Remove from heat, let sit for a few minutes, fluff with a fork, and stir in lime juice or vinegar if desired.
