Marinate the Beef
- Combine sliced beef, baking soda, light soy sauce, peanut oil, and cornstarch in a mixing bowl. Toss to coat and let sit for 15-20 minutes.
Mix the Sauce
- In a small bowl, whisk together chicken broth, oyster sauce, dark soy sauce, sugar, and remaining cornstarch until smooth.
Stir-fry the Beef
- Heat a large skillet over medium-high heat. Add peanut oil and then the marinated beef. Cook for 1-2 minutes until browned; then transfer to a plate.
Cook the Aromatics
- Add more peanut oil if needed, then toss in chopped onion, minced garlic, and ginger. Sauté for 2 minutes until fragrant.
Add Vegetables
- Add asparagus (or vegetables) and cook for about 1 minute until slightly softened.
Combine and Thicken
- Pour the sauce into the skillet with beef and vegetables. Stir continuously for 1-2 minutes until sauce thickens.
