Ingredients
  

For the Beef
  • 1 pound Beef flank steak (or skirt steak) Can substitute with chicken or shrimp
  • 1 teaspoon Baking soda Tenderizes the beef
For the Sauce
  • 1/4 cup Light soy sauce Use gluten-free version for dietary needs
  • 2 tablespoons Peanut oil Suitable for marinating and stir-frying
  • 1 tablespoon Cornstarch Thickens sauce; arrowroot as gluten-free swap
  • 1/2 cup Chicken broth Vegetable broth for vegetarian version
  • 3 tablespoons Oyster sauce Key flavor component
  • 1 tablespoon Dark soy sauce Enhances color and flavor
  • 1 teaspoon Sugar Balances savory flavors
  • 1 teaspoon Sesame oil Adds nutty aroma; optional
For the Aromatics
  • 1 medium White onion Can substitute with shallots
  • 3 cloves Garlic Essential for flavor
  • 1 tablespoon Ginger Zesty kick; use ground ginger if needed
For the Vegetables
  • 1 bunch Asparagus (or other fresh vegetables) Bell peppers or snap peas are good alternatives

Method
 

Marinate the Beef
  1. Combine sliced beef, baking soda, light soy sauce, peanut oil, and cornstarch in a mixing bowl. Toss to coat and let sit for 15-20 minutes.
Mix the Sauce
  1. In a small bowl, whisk together chicken broth, oyster sauce, dark soy sauce, sugar, and remaining cornstarch until smooth.
Stir-fry the Beef
  1. Heat a large skillet over medium-high heat. Add peanut oil and then the marinated beef. Cook for 1-2 minutes until browned; then transfer to a plate.
Cook the Aromatics
  1. Add more peanut oil if needed, then toss in chopped onion, minced garlic, and ginger. Sauté for 2 minutes until fragrant.
Add Vegetables
  1. Add asparagus (or vegetables) and cook for about 1 minute until slightly softened.
Combine and Thicken
  1. Pour the sauce into the skillet with beef and vegetables. Stir continuously for 1-2 minutes until sauce thickens.
