Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. In a medium bowl, mix the mozzarella, roasted red peppers, basil, and optional red pepper flakes.
  3. Butterfly the chicken breasts and season with salt, black pepper, garlic powder, onion powder, and Italian seasoning.
  4. Stuff the chicken breasts with filling and secure with toothpicks.
  5. Sear the stuffed chicken in a skillet with olive oil for 3–4 minutes per side.
  6. Transfer the chicken to the baking dish, add minced garlic, chicken broth, and balsamic vinegar. Bake for 20–25 minutes until fully cooked.
  7. Rest the chicken for 5 minutes before serving.
