For the Slaw
  • 2 pieces Ripe Mangoes Peeled and diced
  • 2 cups Green Cabbage Finely shredded
  • 1 large Carrot Grated
  • 1 piece Red Bell Pepper Thinly sliced
  • ¼ cup Red Onion Thinly sliced
  • ¼ cup Fresh Cilantro Chopped
For the Dressing
  • 3 tablespoons Lime Juice
  • 2 tablespoons Honey (or Maple Syrup) Optional
  • 1 tablespoon Sesame Oil Can substitute with olive oil
  • Salt To taste
  • Pepper To taste

Method
 

Preparation
  1. In a large mixing bowl, combine the diced ripe mangoes, finely shredded green cabbage, grated carrot, thinly sliced red bell pepper, and thinly sliced red onion. Toss until evenly mixed.
  2. In a separate bowl, whisk together the lime juice, honey or maple syrup, sesame oil, salt, and pepper. Mix until well combined.
  3. Pour the dressing over the mango and vegetable mixture. Gently toss everything together until all the ingredients are coated.
  4. Allow the slaw to sit for 5 to 10 minutes at room temperature to enhance the flavors.
  5. Serve chilled or at room temperature as a side dish.
