- In a large mixing bowl, combine the diced ripe mangoes, finely shredded green cabbage, grated carrot, thinly sliced red bell pepper, and thinly sliced red onion. Toss until evenly mixed.
- In a separate bowl, whisk together the lime juice, honey or maple syrup, sesame oil, salt, and pepper. Mix until well combined.
- Pour the dressing over the mango and vegetable mixture. Gently toss everything together until all the ingredients are coated.
- Allow the slaw to sit for 5 to 10 minutes at room temperature to enhance the flavors.
- Serve chilled or at room temperature as a side dish.
