Ingredients
  

For the Spinach
  • 1 bunch Spinach fresh and clean
  • 2 cloves Garlic finely minced
  • 2 tablespoons Green Onion chopped finely
For the Dressing
  • 2 tablespoons Soy Sauce or tamari for gluten-free
  • 0.25 teaspoon Salt to taste
  • 1 tablespoon Toasted Sesame Oil or olive oil
For Topping
  • 1 tablespoon Toasted Sesame Seeds optional

Method
 

Preparation
  1. Trim the ends of the spinach and chop it into 2-inch pieces.
  2. Blanch the chopped spinach in boiling salted water for about 30 seconds.
  3. Transfer the spinach to an ice bath to cool, then squeeze out excess water.
  4. In a mixing bowl, combine spinach with minced garlic, chopped green onion, soy sauce, salt, and sesame oil.
  5. Serve the dish cold or at room temperature, topped with sesame seeds.
