Ingredients
  

For the Chicken Marinade
  • 1 lb chicken breasts, boneless and skinless
  • 1/4 cup soy sauce substitute with coconut aminos for gluten-free
  • 2 tbsp honey maple syrup works well too
  • 2 tbsp rice vinegar apple cider vinegar is a great alternative
  • 1 tbsp sesame oil can be replaced with olive oil
  • 1 tbsp fresh ginger, grated ground ginger is a suitable substitute
  • 2 cloves garlic, minced fresh preferred, garlic powder can work
  • 1/2 tsp red pepper flakes optional for heat
For the Pineapple Salsa
  • 1 cup pineapple, chopped fresh preferred, canned works too
  • 1 medium red bell pepper, chopped any sweet pepper can substitute
  • 1/2 medium red onion, chopped yellow onion can be a good alternative
  • 1/4 cup cilantro, chopped parsley can be used for cilantro haters
  • 1 medium jalapeño, finely chopped omit for less spice
  • 1 tbsp lime juice fresh lime preferred
  • 1/2 tsp salt adjust to taste
For Assembling
  • 8 pieces tortillas corn or flour based on dietary needs
  • 1 tbsp olive oil any cooking oil can be used
  • 2 cups shredded cabbage/slaw mix coleslaw mix works too
  • optional toppings avocado slices, sriracha mayo, lime wedges

Method
 

Marination and Preparing
  1. In a mixing bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, fresh ginger, minced garlic, and optional red pepper flakes until well combined. Add the chicken breasts, ensuring they are fully coated in the marinade. Cover and refrigerate for 30 minutes to 4 hours.
Preparing Pineapple Salsa
  1. While the chicken marinates, prepare salsa by chopping the pineapple, red bell pepper, red onion, cilantro, and jalapeño. Combine with lime juice and salt. Stir and refrigerate until serving.
Cooking Chicken
  1. Heat olive oil in a skillet over medium-high heat. Remove chicken from marinade and discard marinade. Cook chicken 5-7 minutes per side until golden brown and internal temperature reaches 165°F.
Warming Tortillas
  1. Warm tortillas on a hot skillet for about 30 seconds on each side or microwave wrapped in a damp paper towel for 20-30 seconds.
Assembling Tacos
  1. To assemble, lay shredded cabbage on each warm tortilla. Slice cooked chicken and place on top. Spoon pineapple salsa over the chicken. Add optional toppings if desired.
Serving
  1. Serve immediately with lime wedges and enjoy the vibrant flavors of your homemade tacos.
