For the Honey Vinaigrette
  • 0.25 cups olive oil rich base for vinaigrette
  • 2 tablespoons apple cider vinegar provides tang
  • 0.5 cups fresh lemon juice juice of half a lemon
  • 1 tablespoon honey natural sweetness
  • 1 tablespoon shallots finely chopped
  • 1 clove garlic minced

Method
 

Step-by-Step Instructions
  1. In a small jar or bowl, combine olive oil, apple cider vinegar, lemon juice, honey, shallots, and garlic. Whisk or shake until emulsified. Set aside.
  2. In a large mixing bowl, add arugula, chopped pears, goat cheese, walnuts, and thyme. Gently toss together.
  3. Drizzle the honey vinaigrette over the salad and toss gently until coated.
