  • 1 medium Red Bell Pepper
  • 1 medium Potato diced, optional
  • 3 cloves Garlic minced
  • 1 can Crushed Tomatoes

  • 1 teaspoon Sugar
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin or coriander
For the Eggs
  • 4 Eggs room temperature
For the Garnish
  • to taste Fresh Cilantro or Parsley optional, can swap with basil
  • 1 medium Avocado or Cheese (Feta, Parmesan, Mozzarella) optional
For Serving
  • 4 slices Toasted Bread

Step-by-Step Instructions
  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add diced onion, sliced red bell pepper, and diced potato. Sauté for 4-5 minutes until softened.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Pour in crushed tomatoes and add seasonings. Mix and simmer for 3-4 minutes until thick.
  5. Create small wells in the sauce and crack an egg into each well. Cover and cook for 5-8 minutes until whites are set.
  6. Garnish with chopped cilantro or parsley and serve with toasted bread.
