  • to taste Black Pepper adjust or omit if sensitive
For the Base
  • 4 pieces Tortillas whole wheat or gluten-free as necessary
  • 2 tablespoons Olive Oil or cooking spray as an alternative

Step-by-Step Instructions
  1. In a mixing bowl, combine shredded mozzarella, crumbled feta, fresh spinach, diced tomato, finely sliced red onion, and a sprinkle of black pepper. Mix thoroughly and set aside.
  2. Lay a tortilla flat, spoon one-fourth of the filling on one half, fold over, and press down gently.
  3. Heat a skillet over medium heat, drizzle with olive oil, and place the quesadilla in once the oil is shimmering.
  4. Cook for 3-4 minutes until browned on one side, and press down lightly with a spatula.
  5. Flip the quesadilla carefully and cook for another 3-4 minutes until the second side is crispy and cheese is melted.
  6. Remove the quesadilla from the skillet, let cool slightly, then slice into wedges and serve.
