For the Carrots
  • 1 pound Carrots peeled and cut into sticks or baby carrots left whole
  • 1 teaspoon Salt for seasoning
  • 1/2 teaspoon Black Pepper
For the Glaze
  • 2 tablespoons Olive Oil or avocado oil
  • 2 tablespoons Pure Maple Syrup or agave syrup for vegan
  • 1 tablespoon Dijon Mustard or yellow mustard
  • 1 tablespoon Balsamic Vinegar or red wine vinegar
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Dried Thyme or fresh thyme; oregano can be substituted
  • 1/4 teaspoon Red Pepper Flakes optional
For Garnishing (Optional)
  • 1/4 cup Chopped Fresh Parsley
  • 1/2 cup Crumbled Feta or Goat Cheese
  • 1/4 cup Toasted Nuts

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining with parchment paper or greasing it.
  2. Peel and cut the fresh carrots into evenly sized sticks or leave baby carrots whole.
  3. In a mixing bowl, combine olive oil, maple syrup, Dijon mustard, balsamic vinegar, garlic powder, salt, black pepper, and dried thyme. Whisk to form a smooth glaze.
  4. Place the carrots in a large mixing bowl and pour the glaze over them. Toss until they are thoroughly coated.
  5. Spread the glazed carrots in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through.
  6. Check the carrots for tenderness and caramelization; if desired, roast for an additional 5 minutes.
  7. Remove from the oven and transfer to a serving dish. Garnish with parsley, crumbled feta, or toasted nuts as desired.
