Cooking Steps
- Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining with parchment paper or greasing it.
- Peel and cut the fresh carrots into evenly sized sticks or leave baby carrots whole.
- In a mixing bowl, combine olive oil, maple syrup, Dijon mustard, balsamic vinegar, garlic powder, salt, black pepper, and dried thyme. Whisk to form a smooth glaze.
- Place the carrots in a large mixing bowl and pour the glaze over them. Toss until they are thoroughly coated.
- Spread the glazed carrots in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through.
- Check the carrots for tenderness and caramelization; if desired, roast for an additional 5 minutes.
- Remove from the oven and transfer to a serving dish. Garnish with parsley, crumbled feta, or toasted nuts as desired.
