Step‑by‑Step Instructions
  1. Preheat the oven to 400°F (204°C). Gather your ingredients and equipment.
  2. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté for 3-5 minutes.
  3. Add diced carrot and celery, sauté for another 5 minutes until softened.
  4. Pour in heavy cream and stock, stir, and bring to a gentle simmer for 5 minutes.
  5. Fold in lobster meat and frozen peas, simmer for another 5 minutes.
  6. Remove from heat and mix in thyme, lemon juice, and season with salt and pepper.
  7. Place one crust in the pie dish, fill with lobster mixture.
  8. Cover with second crust, seal edges and create vent slits.
  9. Brush top crust with beaten egg.
  10. Bake for 30-35 minutes or until golden brown.
