- Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.
- Cream together softened unsalted butter and light brown sugar until fluffy, about 2 minutes.
- Mix in one large egg, 1½ teaspoons of vanilla extract, and ½ teaspoon of fine salt until combined.
- Gradually add 1 cup of all-purpose flour, mixing until just combined.
- Fold in 1 cup of mashed overripe banana and ¾ cup of chocolate chips, reserving some chips for topping.
- Pour the batter into the prepared baking dish and sprinkle reserved chocolate chips on top. Bake for 33–37 minutes.
