Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, toss diced sweet potatoes with olive oil, salt, black pepper, and paprika.
  3. Spread the seasoned sweet potatoes in a greased 9"x13" baking dish and bake for 20 minutes.
  4. While the sweet potatoes are baking, whisk together the eggs and milk until combined. Stir in the sautéed onion, bell pepper, and half of the cheddar cheese.
  5. Pour the egg mixture evenly over the sweet potatoes and sprinkle remaining cheddar cheese on top.
  6. Return the dish to the oven and bake for an additional 25-30 minutes, or until the eggs are set.
  7. Remove the casserole from the oven and let it cool for 5-10 minutes before serving.
