- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, toss diced sweet potatoes with olive oil, salt, black pepper, and paprika.
- Spread the seasoned sweet potatoes in a greased 9"x13" baking dish and bake for 20 minutes.
- While the sweet potatoes are baking, whisk together the eggs and milk until combined. Stir in the sautéed onion, bell pepper, and half of the cheddar cheese.
- Pour the egg mixture evenly over the sweet potatoes and sprinkle remaining cheddar cheese on top.
- Return the dish to the oven and bake for an additional 25-30 minutes, or until the eggs are set.
- Remove the casserole from the oven and let it cool for 5-10 minutes before serving.
