Preparation Steps
- Finely chop the water chestnuts and set aside.
- In a large mixing bowl, combine thawed spinach with cream cheese, mayonnaise, sour cream, and vegetable mix. Blend until smooth.
- Fold in chopped water chestnuts and bacon pieces into the spinach mixture.
- Spread the mixture evenly onto a tortilla and roll tightly. Repeat with remaining tortillas.
- Wrap the rolled tortillas in plastic wrap and refrigerate for at least one hour.
- After chilling, unwrap and slice each roll into 6 equal pieces. Arrange on a platter to serve.
