Method
 

Step-by-Step Instructions
  1. Melt the butter in a saucepan over low heat. Transfer to a bowl and cool in the fridge.
  2. Whisk the cooled butter, granulated sugar, brown sugar, and red gel food coloring until smooth.
  3. Add the egg and vanilla to the mixture; stir gently until just combined.
  4. Sift together flour, cocoa powder, baking powder, baking soda, and salt. Gradually add to wet mixture.
  5. Scoop dough into tablespoon-sized balls and place on a baking sheet; refrigerate for 1 hour.
  6. Preheat oven to 180ºC (355ºF) while dough chills.
  7. Bake cookies for 10-11 minutes until edges are crisp. Cool for 5 minutes on baking sheet.
  8. Beat cream cheese and butter until smooth; add powdered sugar and vanilla bean paste until creamy.
  9. Frost cooled cookies generously with the cream cheese frosting.
