Ingredients
  

For the Crust
  • 200 grams Chocolate Cookies gluten-free options available
  • 100 grams Unsalted Butter melted
For the Filling
  • 500 grams Cream Cheese softened
  • 150 grams Granulated Sugar or a sugar substitute
  • 3 units Eggs room temperature
  • 1 tablespoon Orange Zest freshly grated
  • 60 ml Orange Juice freshly squeezed
  • 1 teaspoon Vanilla Extract alcohol-free
  • 150 grams Semi-Sweet Chocolate Chips or dark chocolate
  • 1 teaspoon Agar-Agar Powder or gelatin
  • 60 ml Water for dissolving agar-agar

Method
 

Prepare the Crust
  1. Preheat your oven to 350°F (175°C). Crush chocolate cookies into fine crumbs and mix with melted butter. Press into a 9-inch springform pan. Bake for 10 minutes and let cool.
Make the Filling
  1. In a bowl, beat softened cream cheese and sugar until smooth. Add eggs one by one, mixing after each. Incorporate orange zest, orange juice, and vanilla.
Blend in Chocolate
  1. Melt the chocolate chips in a microwave-safe bowl. Fold into the cream cheese mixture until just combined.
Incorporate Agar-Agar
  1. In a saucepan, simmer agar-agar powder with water until clear. Let cool slightly and fold into the chocolate mixture.
Bake
  1. Pour cheesecake filling into the cooled crust. Bake at 325°F (160°C) for 55-65 minutes until edges are set but center jiggles.
Cool and Chill
  1. Turn off the oven and let the cheesecake cool with the door ajar for 1 hour. Then refrigerate for at least 4 hours or overnight.
