- In a large mixing bowl, combine ground chicken, onion, garlic, cilantro, mint, egg, breadcrumbs, cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper. Stir gently for 1-2 minutes until just combined.
- Shape a small patty from the mixture, cook it in a skillet over medium heat for 3-4 minutes, and taste to adjust the seasoning.
- With wet hands, shape the mixture into elongated pieces measuring 1.5 to 2 inches, placing them on a parchment-lined tray.
