Ingredients
  

For the Kofta
  • 1 pound Ground Chicken opt for dark meat for juiciness
  • 1 Onion finely chopped; shallots work well
  • 2 cloves Garlic minced, adjust to taste
  • 1/4 cup Fresh Cilantro can substitute parsley
  • 1/4 cup Fresh Mint optional
  • 1 Egg binds the mixture; use flax egg for vegan
  • 1/2 cup Breadcrumbs panko is excellent for crunch
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Smoked Paprika regular paprika is also fine
  • 1/2 teaspoon Cayenne Pepper omit for milder taste
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper adjust to taste
For the Garlic Yogurt Sauce
  • 1 cup Greek Yogurt low-fat or full-fat
  • 2 tablespoons Fresh Dill can substitute tarragon
  • 1 tablespoon Lemon Juice or vinegar for acidity
  • 1 tablespoon Olive Oil use light oil if preferred
For Garnish
  • 2 tablespoons Parsley chopped
  • 2 pieces Lemon Wedges for serving

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, onion, garlic, cilantro, mint, egg, breadcrumbs, cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper. Stir gently for 1-2 minutes until just combined.
  2. Shape a small patty from the mixture, cook it in a skillet over medium heat for 3-4 minutes, and taste to adjust the seasoning.
  3. With wet hands, shape the mixture into elongated pieces measuring 1.5 to 2 inches, placing them on a parchment-lined tray.
  4. Cover the tray with plastic wrap and refrigerate the shaped kofta for at least 30 minutes.
  5. Heat olive oil in a skillet over medium-high heat. Add the chilled kofta and cook for about 6-8 minutes until golden brown.
  6. Prepare the garlic yogurt sauce: combine Greek yogurt, garlic, lemon juice, olive oil, and dill in a bowl; stir until smooth.
  7. Serve the cooked kofta hot, drizzled with yogurt sauce and garnished with parsley and lemon wedges.
