- Begin by peeling and chopping your potatoes into evenly-sized chunks. Boil them in a large pot of salted water for about 15–20 minutes, or until fork-tender. Drain the water and mash the potatoes until smooth and creamy.
- In a large mixing bowl, combine the cooled mashed potatoes with half of the shredded cheese, chopped green onions, salt, pepper, and the beaten egg. Mix thoroughly until the ingredients are well incorporated.
- Using a tablespoon, scoop up the potato mixture and form small balls or puffs. Place the shaped bites on a baking sheet lined with parchment paper.
- Roll each potato puff in the breadcrumbs, ensuring they're evenly coated on all sides. Set the coated bites back on the baking sheet.
- In a large skillet, heat about an inch of oil over medium-high heat until it reaches 350°F. Carefully add the coated bites in batches, frying each side for about 3–4 minutes or until golden brown.
- Once crispy and golden, transfer the bites to a paper towel-lined plate to absorb excess oil. Let them cool before serving.
