- Start by grating 2 large starchy potatoes and 1 medium onion using a box grater or food processor. Transfer the mixture to a clean kitchen towel and squeeze out excess moisture.
- In a large mixing bowl, combine the drained potato-onion mixture with 2 beaten eggs, 1/4 cup of flour, and a handful of freshly chopped herbs. Stir until well incorporated.
