Step-by-Step Instructions for Herby Latkes
  1. Start by grating 2 large starchy potatoes and 1 medium onion using a box grater or food processor. Transfer the mixture to a clean kitchen towel and squeeze out excess moisture.
  2. In a large mixing bowl, combine the drained potato-onion mixture with 2 beaten eggs, 1/4 cup of flour, and a handful of freshly chopped herbs. Stir until well incorporated.
  3. In a large skillet, heat enough oil to reach about 1/4 inch deep over medium heat until a small dollop of batter sizzles.
  4. Spoon about 1/4 cup of the latke mixture into the hot oil, flatten it into a patty. Fry for 3-4 minutes until golden brown, then flip and fry the other side.
