Preparation

  3. In a separate bowl, whip the egg whites until glossy and stiff peaks form, about 4-5 minutes.
  4. Gently fold the yogurt, vanilla extract, and lemon zest into the dry ingredients until just combined.
  5. Carefully fold the whipped egg whites into the batter using a spatula.
  6. Pour the batter into the prepared cake pan, smoothing the top evenly.
  7. Bake for 30-35 minutes or until golden brown and springy when touched.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
