  • 200 grams Sweet Potato Glass Noodles (Dangmyeon) soaked in water
  • 100 grams Enoki Mushrooms
  • 2 tablespoons Green Onion chopped
  • 4 cups Water or Beef Broth beef broth recommended
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Dark Soy Sauce

Step-by-Step Instructions
  1. Soak the sweet potato glass noodles in warm water for about 15 minutes, then drain and set aside.
  2. In a medium pot, heat the leftover beef bulgogi over medium heat for 3-4 minutes.
  3. Add dark soy sauce and sesame oil to the pot, stirring for 2-3 minutes.
  4. Pour in 4 cups of water or beef broth and bring to a gentle boil for 5-7 minutes.
  5. Add the soaked glass noodles and enoki mushrooms, cooking for an additional 3-4 minutes.
  6. Remove from heat, garnish with chopped green onion, and serve immediately.
