Step-by-Step Instructions for Healthy Homemade McGriddles
  1. In a mixing bowl, combine 1 cup of Bisquick or pancake mix with 1 scoop of vanilla PEScience Select protein powder. Gradually stir in ¾ cup of skim milk and ½ teaspoon of maple extract until the batter is smooth and well mixed. Set aside.
  2. Preheat a nonstick skillet over medium heat for about 2-3 minutes. Lightly spray with cooking spray. Pour small circles of the pancake batter into the skillet, cooking 2-3 at a time. Cook for 2-3 minutes, then flip and cook for an additional 1-2 minutes until golden brown.
  3. Whisk together 4 large eggs in a bowl. Pour into a greased pan over medium-low heat, swirling to cover the base. Once edges firm up, fold the egg into a rectangular shape and cut into squares. Cook until set, about 2-3 minutes.
  4. Assemble by placing one pancake bun on a plate, then layer with a folded square of cooked eggs and your choice of protein like turkey bacon or chicken sausage. Top with another pancake bun.
