- Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with foil and lightly grease it.
- Cream together the softened butter and brown sugar until smooth and creamy.
- Add the egg and vanilla extract, mixing on medium speed until fully integrated. Then incorporate baking soda and salt.
- Gradually add the flour, mixing just until combined, then gently fold in the oats.
- Press half of the oat mixture into the bottom of the prepared baking pan.
- Microwave the dulce de leche for 45-60 seconds until warm and pourable. Spread evenly over the oat base.
- Dollop the remaining oat mixture over the dulce de leche layer and spread gently.
- Bake for 23-28 minutes until golden brown, with a slight jiggle in the center.
- Allow to cool for 1-2 hours in the pan before lifting out and slicing into squares.
