Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with foil and lightly grease it.
  2. Cream together the softened butter and brown sugar until smooth and creamy.
  3. Add the egg and vanilla extract, mixing on medium speed until fully integrated. Then incorporate baking soda and salt.
  4. Gradually add the flour, mixing just until combined, then gently fold in the oats.
  5. Press half of the oat mixture into the bottom of the prepared baking pan.
  6. Microwave the dulce de leche for 45-60 seconds until warm and pourable. Spread evenly over the oat base.
  7. Dollop the remaining oat mixture over the dulce de leche layer and spread gently.
  8. Bake for 23-28 minutes until golden brown, with a slight jiggle in the center.
  9. Allow to cool for 1-2 hours in the pan before lifting out and slicing into squares.
