For the Coating
  • 1 cup Chocolate Chips Use dairy-free chocolate for vegan option.

Method
 

Directions
  1. Combine 1 cup of creamy peanut butter and 1/3 cup of maple syrup in a mixing bowl until smooth.
  2. Stir in 2 cups of old-fashioned rolled oats until evenly coated.
  3. Spoon the mixture into silicon molds, filling each mold 3/4 full and pressing down firmly.
  4. Add a generous dollop of additional peanut butter on top of each cup, optional to mix with protein powder.
  5. Freeze for about 20 minutes until set but not rock-solid.
  6. Melt 1 cup of chocolate chips in a microwave-safe bowl, heating in increments and stirring until smooth.
  7. Drizzle the melted chocolate over each oat cup using a spoon or piping bag.
  8. Return to the freezer for another 20 minutes to harden the chocolate.
  9. Carefully remove the cups from molds, sprinkle with flaky sea salt if desired, and enjoy.
